Stevie Wonder’s We Can Work It Out has to be the best one by far.
I think it might be the only one I actually care for enough to play it in my rotation. I’m extremely picky about Beatle covers and I think most of them are garbage.

Fiona Apple’s “Across The Universe ” is quite good. Love the way she sings it simply and honestly, like John.
In the video, look for John C. Reilly stealing (saving?) 45s from the smashed jukebox.

Booker T and the MG's did a really weird Beatles cover called “Medley Avenue” which is just a instrumental form of Abbey Road and it just mashes up some of the songs together like a medley. It's pretty cool, it's basically using an organ for the vocals, but they're a really tight funk band that definitely adds a uniqueness that is very “Beatle-like”. And recently the Easy Starr All Stars did their version of Pepper with Sgt. Peppers Lonely Hearts Dub Band which is just a reggae version of the album but it's pretty cool. I don't really like straight covers, although I would definately recommend YouTubing Yolanda Adams and Billy Preston's version of Imagine …it nearly brought a tear to my eye the first time I heard it. I don't know if anyone could really duplicate an actual Beatles tune all that well though, even though I'm sure it's been done.

I like the movie Across The Universe cover Why Don’t We Do it In the Road sung by Dana Fuchs.
I know this is a terribly awful thing for me to say, but personally I like the cover better than the original version with Paul singing.

When the song started I was like “Uh?” but as while I was listening to it I was blown away. What a way to take a song with such unique style and make it your own and at the same time, making you feel what the original writer intended.
