In a new interview while on tour in Australia, Paul said this about Jet .

“[Jet is] a little bit about the experiences I’d had in marrying Linda. Her dad was a little old fashioned and I thought I was a little bit intimidated as a lot of young guys can be meeting the father figure… Anyway, the song starts to be about the sergeant major and it was basically my experience roughly translated.
“I never do a song with the actual words that actually happen because then that’s like a news story. ‘[singing] Oh Linda, I was going to see your Dad and he was intimidating.’ A bit boring. So I mask it and mould it into a song, something you can sing reasonably.”

I vaguely recall that “Jet ” was partly about Paul’s dog which he named “Jet “.
Paul has also said that Jet was a little black pony they had. Maybe it’s both, I don’t know. I was listening to a podcast and they said Jet was a horse. If that’s the case it brings a different meaning to “Climb on the back and we’ll go for a ride in the sky” – I always thought he was talking about a motorcycle. Also, I always thought that in the song, Jet was the girl’s name. I don’t know. I just know I really liked this song when I was 13 years old when it came out. At the time I didn’t know who it was, I hadn’t made the Beatle connection yet.
The other main thing about this song for me is I always thought the main riff was heavily reminiscent of the riff in “Satisfaction”. I won’t say stolen exactly, maybe influenced by. It’s the same notes.

I understood that Jet was a dog but, yeah, in the song I took it as the girl’s name. As for “ride in the sky” . . . jet plane, of course. 🙂

It seems evident from the photos and recent references that there was a pony named Jet , which fits in with these lyrics:
Jet with the wind in your hair
Of a thousand laces
Climb on the back and we’ll go for a ride in the sky
but Paul had referred earlier to a black Labrador puppy called Jet , so maybe there were two animals both called Jet ?
