Ready in about fifteen minutes,

3 lamb’s hearts, stuffed with lamb sausagemeat mixed with basil, parsley, coriander, mushroom, and brown rice. Very slow roast (160C for 2 hours in a foil covered heat-trap, with foil removed for last 30 minutes, and a sweet chilli sauce covering).

Sweet potato mash.

Chilli, onion, smoked bacon lard-ons, scrambled egg, side-dish.

I am just about ready to head into the kitchen and throw together a seafood stir-fry.

Seafood involved being tiger prawns, squid and crayfish tails; vegetables pak choi, ribboned orange, purple and yellow carrots, daikon radish, shiitake mushrooms, broccoli, baby sweetcorn, bamboo shoots, red onion and baby peppers; rice noodles (fresh shop bought rather than rehydrate); sauce saké, dark soy, ginger, chilli peppers, garlic, shallot, coriander and five spice; cooking in homemade chilli olive oil.

I am also beer tasting tonight. I have already tasted Blood Orange Wheat Beer from Adnans. I am currently tasting Raspberry Fruit Beer from Used Our Loaf (they use bread that past its sell-by in all their beers). To go with my meal I have a Cornish Saison from St Austell (says it goes well with shellfish). I will finish with Oakham Ales Double Hopped Citra IPA – which is meant to taste of mango, lemon and lime!

Going very much for the mid-summer party mood vibe, music-wise I am deciding between Marley’s Natty Dread, Love’s Forever Changes or Leonard Cohen’s Death of a Ladies Man.

Barging in to tell you about the stirfry I shall make for dins (approximate portions because that’s how i cook):

500g pork mince

1/2 red onion, or whole depending on size, not too much!

3x spring onions/shallot chopped, separate the white ends from the very green ends

chopped fresh coriander

Mix together about 1-2 heaped teaspoons of huy fong chili garlic sauce with a good dollop of indonesian sweet soy sauce and similar normal soy sauce

Any other vegetable you like, shredded boc choy is good, but the harder veges should be chopped fine or grated, grated carrot always works.

Your favourite noodles, I like wokka singapore style.

Method:

Stir-fry in a little oil red onion and white ends of spring onions in a little oil with your other vegetables until they start to soften, remove.

Stir-fry your pork mince until browned, throw in the sauce and simmer until it’s reduced a bit, you don’t want a soggy stir fry and this helps to caramelize the pork.

Throw in your veges and heat through for a couple of minutes, throw in your noodles until its all saucy and then throw in the rest of the shallot, don’t cook for too long and take off the heat.

Check for taste, splash a little normal soy if too sweet or not salty enough, but not too much!

Stir in your coriander! Eat!

Once you get the hang of stir-fry bases you can go nuts with this kind of thing. The latest thing I’ve tried with this recipe is to stir in some unsweetened peanut butter after the sauce stage, about a teaspoon should be enough, and mix it well so it softens and adds a nutty texture to the meat. It sounds weird but it works!

Threw together a brandy and peppercorn sauce this afternoon, ready for reheat. Have potatoes boiling with saffron for a mustard mash. Beef (aka beefsteak) tomato quartered and ready to chargrill. Half-a-dozen or so asparagus spears ready to cook in garlic butter. All to go with a pan-fried Aberdeen Angus T-bone steak (cooked rare).

About to head into the kitchen to cook the tomato, asparagus and steak.

I have a half-leg of lamb (bone-in) marinating in a bottle of mulled red Spanish Wine, along with shallots, whole garlic cloves, ginger root, allspice berries, mixed peppercorns, sprigs of rosemary and parsley (all important as the lamb will be slow cooked in the marinade with some more vegetables added and stock). In all, one of my favourite one-pot dishes.

(About 10 or so minutes ago) My take on surf and turf…

Linguine tossed through with (woked separately) king prawns, sweetcorn, peas and a garlic, shallot and tomato sauce.

Griddled asparagus in garlic butter and chopped Roquito chilli pepper pearls.

Rib eye steak that’s been marinading in chilli oil done on the rare side of medium-rare rather than the medium.

Not doing Thai cuisine’s wonderful palette a favour here……..Looks so awful…Sounds so bad…..But tastes great…. marinated chicken and mimosa leaves….very spicy.

A North Thailand Essan dish. Whenever I order it they all laugh at how far Ive ‘gone native’

What a nice surprise! Wake up at half-one in the morning, hungry, not feeling like cooking, and there’s still a pizza place open and delivering until three.

Just ordered a meat feast pizza, BBQ chicken wings & BBQ ribs.

Order accepted and due about 2:50. Good to know there’s somewhere open into the early hours…

…pizza, wings and ribs arrived. Cheese bread with beef sausage was missing beef sausage. Complained. £2 difference. Asked me if I wanted them to send the right cheese bread, with the sausage I paid for instead of without. Too fecking right, I said. Waiting for cheese bread with beef sausage.
