I was wondering about that. I was going to pick up the missing ingredients for my salsa (my friend was saying that if it's blended, it's actually chili? Is that right, mithveaen?), so I thought I could pick up some plantains too.
Pick them up Skye… and remind me on Monday about the lentils. I don't work, it's Day of Dead, so I can prepare them.
Oh and your birthday is on Saturday!! Happy Birthday !! (In advance just in case I'm not around that day)

and here's your birthday gift Skye 🙂
This is really easy, all you need is eggplants, tomatoes, onions and green bellpeppers (these are optional, we skip them because the husband doesn't like them)
Cut the eggplants to around 1 cm-thick slices (you can rub them in salt and leave them for 15-20 minutes – my mjom says this takes out the bitter taste in them. I sometimes don't do this and it turns out ok)
Either deep fry the slices – or just drizzle some olive oil and bake them in the oven if you count your calories 🙂
Slice the tomatoes and bellpeppers and chop the onions (not finely).
In your oven tray place the ingredients in layers. (tomatoes in the bottom will give a sweet taste, this is what i do)
then eggplants, bellpeppers and onions on the top.
Add salt, pepper and your choice of spices (we add a mix of spices that;s called Arabic masala, or maybe it's the same as that all spice thing?) and a little cinnamon because we love love love it.
Don't add oil because the eggplants already retained some. just add some water (really little so you don't end up with lots of watery gravey) and cover the tray with foil paper (this is what it's called, no?) and put it in the oven for 30 minutes or so.
It's done when the onions are cooked but still a bit crunchy. n

Sorry it took me so long to respond to this and thank you for your birthday gift! I have a couple of questions:
1. If I bake it, what temperature should the oven be?
2. By Arabic masala, do you mean a type of curry powder? I tried googling it, but it the results were x-rated.
