Like any cookery book, though, we only use a handful of recipes from it. I suppose the key is to find five/ten or so that you think work, then gradually expand your repertoire.
Good luck with it! If you find it hard, and really want to carry on, don't give up if you don't find meals you don't get on with at first. I'm sure there are loads of veggie sites out there with better advice and recipe suggestions than I can offer.

My wife and I have not gone completely veggie but have been eating a lot more of them lately. We have no desire to go totally meat free, but we are eating a lot less of it and are definitely enjoying the health benefits that go along with it.
Thanks to all who have offered up the veggie recipes so far – keep them coming! One of our favorites is very simple.
We sauté onions, mushrooms, zucchini, orange peppers and garlic in olive oil. When those are cooked to your desired texture (sometimes we like them caramelized, sometimes a bit more firm) add some fresh diced tomatoes, spinach and herbs (oregano, basil and thyme). We then serve that over a bed of multigrain pasta – not the whole wheat pasta that has the texture of sand! This brand works great for us and our local markets usually carry their own generic brands that are just as good.

It doesn't have to be Meat Free Monday: It could be Meat Free Tuesday, too, or Wednesday….<smiles!> Around our house, we have inadvertent “Meatless Mondays” on random days of the week….never planned, just happen that way…..for us, it's more a matter of just cutting back on meat consumption. I can't resist bacon, ribeyes, shrimp, turkey….
Molly Katzen's Moosewood Cookbook is a nice vegetarian cookbook! The “Zuccanoes” are fun to make and delicious. The Poundcake recipe in there is a killah…..some chocolate sauce drizzled on top, a bit of vanilla ice-cream…..oh, man! Who needs dinner???
Does chicken count as a vegetable? (Just kidding: that's what I routinely ask my vegetarian friends…..)

It's the same way around our house. By cutting back on meat and other things I've been able to lower my cholesterol by more than 100 points and can still be looking forward to cooking and eating a full-blown-juice-down-your-chin-man-am-I-stuffed Thanksgiving dinner.

Meatless Monday* = Who likes pancakes? (Again!)
I went shopping for some of those frozen meals for work yesterday, where I discovered that if it's in the health/vegetarian section, it's automatically a buck more. Lucky for me, there's a good number of vegie selections in the omnivore area.

I actually find that funny. How vegetarians don't eat any animals, yet some of them eat fish. I don't bag vegetarians. If you don't like eating cows, you don't like eating cows. Simple. I'm neither a vegetarian nor a vegan. Although I'm not a meat crazed lunatic.
I sometimes even choose to not eat the meat on my plate. Dunno why, sometimes meat just puts me off.
Don't you dare steal my cookies.

Thanks. I think I can manage another on Friday, and probably Saturday for my birthday. (HAHAHA Do you hear that everyone? You have to eat what I want for one whole day!)
I was wondering about that. I was going to pick up the missing ingredients for my salsa (my friend was saying that if it's blended, it's actually chili? Is that right, mithveaen?), so I thought I could pick up some plantains too.
