First you cant cook a gammon joint in the fridge, you need to put it in the oven or in a pan covered in water.
Cooking-wise (if going by oven) pre-heat the oven to 180° Celsius (or whatever the gas mark equivalent is) and then add some salt, pepper and herbs for between 90 and 120 mins*. Check after 90 mins by cutting it open and seeing if the juice inside is clear, if so its cooked if not stick it back in.
Other ways exist but this is what i do and it cooks fine. My rule of cooking joints of meat or poultry is if you dont have a clue go with 180° Celsius (i have an electric oven) and just keep an eye on it.
*Depends on size of joint. I think its normally 20 mins per 1/2 lb + 20 mins but check to be sure.
