I didn’t swim this morning………… bit of a headache for some reason.

Getting ready for a hopefully quick trip to immigration this morning for my yearly visa. Got all my ducks in a row…letters from the bank and such. I don’t have to do this until 21st of January but I enjoyed it so much last time on Boxing Day that I thought I’d try the day itself. Should be pretty empty and the staff who all wear military uniforms and can be a bit sniffy were all in Santa hats and smiling last time.

Then I’ll gym……..Then it’s the Big Lunch and phone calls to England.

I haven’t watched the 1+ videos so I’ll do that when I’m alone……Did ‘Love Actually’ yesterday……Christmas is all about tradition for me. Made the mulled wine, bought the stilton. I’ll worry about my spread next year.

Okay, marinade drained off turkey breast and into a jug (it will later go into the gravy). Switch oven on to heat up to 150 while turkey breast settles. In about 20 minutes chuck a splash of honey brandy into the roasting tin, cover with foil, place in oven and switch heat down to 100. Leave to slow roast for 1 hour 45 to 2 hours. Always use a meat thermometer to check its thickest has reached a temperature of at least 100.

Alright, @Ahhh Girl has been trying to distract me! The turkey breast went in on time. Now I’m readying the roasties. Six maris pipers chopped up earlier and par boiled. Goose fat now being mixed with sage and cayenne ready to be applied in big dollops when twice-cooked turkey (or even thrice in some dishes to come).

Also preparing stuffing balls. Sausage-meat from 6 Italian-styled pork sausages, chirizo light if you like, chopped up garlic, mushroom, red onion, chesnuts, and four bashed up digestives.

Will be made into balls and go into the oven at the same time as the roasties.

Getting there!

Vegetables prepared. Two large parsnips, two large carrots, both topped and tailed and cut into eight chunks. Two quartered red onions. Two quartered portabello mushrooms. A clove of garlic. Remaining half of scotch bonnet. Half a honeycomb. That is honeycomb from bees and not confectioners. Lovely natural bees honey straight from the comb oozing over the vedge and caramelising.

Yummy! Yummy! Yummy! I got love in my tummy!

Okay, turkey breast out of oven. Leave to cool for about half-hour. Then remove the peppered skin. Lie it flat on baking tray, smother with olive oil. Put into oven at 150 for 35-40 minutes and you have perfectly crispy turkey breast skin. I sprinkle with cayenne pepper and garlic salt.

I will have everything prepared in about 3 hours.

Potatoes, honey parsnips and carrots etc, stuffing balls, into oven at mid-day.

Cook for 45 minutes.

Central two or three inches (depending how hungry) cut horizontally out of breast, with a tablespoon of juices, wrapped in tinfoil to reheat. Last fifteen minutes.

Same time, the marinade and stock you’ve collected in the jug, you chuck about quarter over the already roasting veg.

The rest goes into a saucepan to be reduced to a gravy.

Sorry. I don’t do puddings.

I did a similar thing on my first Xmas alone………Spent forever cooking…….ate it all in 10 mins and then forever washing-up and clearing.

Bought a Christmas meal for 1 the next year…….. Embarrassing on check-out……..

 

Nowadays here I book a restaurant with friends.

 

Yours does sound tasty though. Enjoy Nasty.
